Everyone loves pancakes, specially a stack of well cooked and well served pancakes. But when you are a fitness freak you avoid these delicious thick syrup covered carb bombs, no matter how delicious no matter how beautiful that stack looks on the morning plate. Well you dont have to avoid them anymore, Why? Because today, in recipe of the week, Im sharing a protein rich, vanilla coconut protein pancakes recipe. Lets not waste a sec and get to business.
Vanilla Coconut Protein Pancakes
- 2 tbsp spelt flour
- 2 tbsp almond meal
- 3 tbsp protein powder (Vanilla Protein)
- 1/2 tsp baking powder
- a pinch of salt
- 1/2 tsp chia seeds
- 1 tbsp shredded unsweetened coconut
- 1 egg (Only white if you want more protein)
- 2-4 tbsp almond milk
Take all dry ingredients in a bowl mix wet ingredients, 2-4 tbsp almond milk. Every protein acts differently so avoid getting the batter too thin, if by accident its thin then add protein powder accordingly or add almond milk if its too thick. Stir the ingredients till the pan is heated. Spray some non-stick cooking spray on pan. On heated pan pour 2 tbsp batter to make one pancake cock until topside start bubbling flip it over to cook other side.
